In 2008, after the Relais was opened, we felt the need to complete its premises with a restaurant, thought to be serving guests from our rooms and outside. This is how Ristorante Le Ville was born. The concept has been, from the beginning, to be offering high quality food in a cosy and exclusive setting; Since 2011, chef Andrea Besana is in charge of the kitchen, bringing his experience and ideas to our guests.
Our chef’s take on cooking is of a food that is born and developed from local ingredients and traditions. Produce, meats and fish are sourced from the best local producers. The reinterpretation of the great classic dishes of Ligurian and Italian tradition, pairs the best local products with great international ingredients. The menu is created monthly from scratch, with a contemporary Italian cooking style, state of the art techniques, and oriental influences, paired with the remembrance and the tradition, that are what makes Italian food world famous, and for us are a constant source of inspiration. Last but not least, nature and its cycles, are dictating the term of an ever changing menu that keeps following the seasonality of the products.
